*Disclaimer: I never instruct people on how much seasoning to use in a dish. I feel like this is the portion of cooking where a person learns discretion and creates their culinary identity. I only share measurements that I feel are absolutely necessary.
Ingredients
1/4 cup olive oil
Diced red onion
Bell peppers
2 Large Zucchinis diced into chunks
1 bag frozen green beans
1 bag frozen carrots
1 can diced tomatoes
6 cups chicken broth
Lemon Pepper Seasoning
Black Pepper
Dried Parsley
Creole seasoning
Garlic powder
½ teaspoon sugar
1/2 teaspoon coarse ground black pepper
Sausage of your choice
In a large stock pot, add the olive oil over medium heat and sauté the onions, bell peppers, and Zucchini. Sauté until softened. In a separate pan, sear sliced sausage until the desired char is achieved. Once the sautéing and searing is complete, add the remaining ingredients in the following order: Vegetables, broth, sausage and seasoning. Bring to a rapid boil and reduce to low heat. Stir occasionally. Once the heat is reduced, allow the soup to simmer for one hour. Allow the soup to settle for ten minutes before serving. Enjoy!
