Basic but BOMB: Overstuffed Bell peppers

Overstuffed Bell peppers

Fresh whole green, yellow or red bell pepper
Ground beef or Turkey
Zatarian’s Dirty Rice Mix
1 white onion diced
2 tsp of minced garlic
2 can of Rotel
2 tsp of olive oil 1/2
1 1/2 cups of water
Shredded cheese(s) of your choice

 

*Pre heat oven to 370 degrees

First, remove all insides from Bell peppers. (Once cleaned and prepared, bell peppers can be sliced in half or stuffed Whole.) Combine turkey/beef with garlic, onion, and olive oil then brown. Add Zatarian’s Dirty Rice Mix, rotel and water. Bring to a boil and reduce heat to low. Allow to simmer for 20-30 mins ( or until Rice is tender to your preference) layer the bottom of the serving dish with Rice, add peppers and fill with rice mixture. Top with cheese and cover with foil. (TIP: spray the foil with cooking spray so that your cheese doesn’t do the old Pizza trick -_-😒) bake on 370 for 30 mins or until Bell peppers are tender to your preference. Allow peppers to cool and settle for about 15 mins and serve.
