Overstuffed Bell peppers
3 Fresh whole green, yellow or red bell pepper
Ground beef or Turkey
Zatarian’s Dirty Rice Mix
1 white onion diced
2 tsp of minced garlic
2 cans of Rotel
2 tsp of olive oil
1 1/2 cups of water
Shredded cheese(s) of your choice
*Pre heat oven to 360 degrees
- First, remove all insides from the Bell peppers. (Once cleaned and prepared, bell peppers can be sliced in half or stuffed Whole.)
- Combine olive oil, turkey/beef, garlic, and onion in a pot on medium. Cook until meat is browned.
- Add Rotel.
- Add Zatarian’s Dirty Rice Mix and water to the browned meat mixture. Bring to a boil and reduce heat to low. Allowing the rice to simmer for 20-30 mins ( or until Rice is tender to your preference)
- Layer the bottom of the serving dish with the rice mixture and stuff each pepper. Top with cheese and cover with foil. (TIP: spray the foil with cooking spray so that your cheese doesn’t create the classic delivery Pizza fail 😒). Bake on 360 for 30 mins or until Bell peppers are tender to your preference. Allow peppers to cool and settle for about 15 mins and serve.
